Infibra flours are professional flours created to make the most out of what nature gives us in the wheat grain – vitamins, fiber, minerals, germ – responding to the growing needs of modern consumers for well-being and taste, while maintaining the flavor of the past.
With the addition of wheat germ. These flours contain wheat germ and can be used instead of white flours, giving the advantage of a better taste profile and improved nutritional content compared to white flours.
Wheat germ represents the most nourishing part of the wheat grain. Molino Denti extracts this germ through a special technique and cold-presses them before adding them to the flours in order to preserve their organoleptic properties as well as improve the flavor profile.
Given its W index of 300 we recommend this flour be used instead of your regular strong or Manitoba bread flour, as it will render an improved taste profile as well as breads with a higher fiber and mineral content.
